Our Beloved Heirloom Tomatoes

Every chef looks forward to this time of year when the farmers markets are filled with colorful local and organic produce, especially the heirloom or heritage varieties. Heirloom varieties are historically beloved plants that have been pushed out for more commercially viable crops. Here at TASTE, we think heirloom produce offers more of the flavors that define a particular fruit or vegetable.

Heirloom tomatoes reign supreme. Ranging in color from butter-yellow to fire-red and available in a wide array of sizes, these beauties have taken front stage on our late-summer menu. Beyond offering Jones Creek tomatoes dressed with basil and olive oil as a simple side, we are also putting the T back in BLT. Our spin on the classic sandwich comes in the form of our seasonal frittata. We cook it up with Skagit River Ranch bacon and Quillisascut chevre before topping it with local greens and a hearty slice of heirloom tomato. The season won’t last long, so we are already looking forward to next year.
