What’s in the CSA Box

Our weekly CSA delivery arrived today from Boistfort Vally Farm. The box included bunched carrots, yellow chard, Walla Walla onions, summer squash, zucchini, green beans, purple beans, yellow wax beans, green cabbage, summer savory, slicing cucumber, blonde cucumber, apricots and lily bouquet and stems.

With fall right around the corner, we want to guarantee than we can have a little bite of summer later in the year. That’s why we like to freeze our green beans. Here are some quick guidelines provided by Boistfort or visit Pick Your Own for step-by-step directions with photos.

Freezing Green Beans: Clean and trim both ends of beans.  Submerge in boiling water for 3 minutes, then scoop out beans carefully and dunk into icy cold water immediately.  Drain well and pack into vacuum seal or freezer bags.  Beans will last several months in the freezer-longer with the vacuum seal bags.
