What’s in the CSA Box

Every week we look forward to receiving our CSA Box from Boistfort Valley Farm to inspire us to create new and exciting dishes. This week our box includes carrots, red cabbage, Walla Walla sweet onions, slicing cucumbers, summer squash, Carpathian garlic, escarole, green beans, mizuna, Italian parsley and a pint of tomatoes. 

The Director here at TASTE, Danielle Custer, has her special Green Bean Salad that she loves to make this time a year when she accumlates green beans from her weekly CSA delivery.

Here’s how she makes the salad:

I blanch green, purple and wax beans separately in salted boiling water until al dente and then quickly shock them in ice water and dry them off. Then, I combine the beans and drizzle them with a buttermilk blue cheese dressing (combine buttermilk, mayo, sour cream, white wine vinegar, crumbled blue cheese, minced sweet onion, herbs and spices to taste). I let the beans sit in the dressing for a few hours and then arrange them on a nice platter and top with lighted toasted pecans and a generous sprinkling of chopped fresh basil from my garden and a pinch of course sea salt. It’s delicious every time!
