Anna’s CSA Tips & Recipes

After a recent trip to Oaxaca, Mexico, I discovered the joy of fresh tortillas.  Easy to buy, store & make – just mix maseca flour with water & salt, press & slap on the pan – they are infinitely more delicious than the pre-packaged stuff.  They are also a great vessel for all my csa veggies.  Using a griddle as I didn’t have the traditional comal, I threw a little quesadilla party where everyone could build their own with premade fillings.  Some stand outs – garlicky summer squash & jack cheese, sautéed spinach & chèvre, and chorizo, onion & cheddar.  A little homemade peach & tomato salsa on the side with last week’s cilantro finished off a great summer meal.
